This is truly a sugar-free recipe with a delicious creamy texture and rich vanilla flavor! With only 3.1 grams of carbs per 1/2 cup.

About Keto Vanilla Pudding

In fact, when I first tasted this keto vanilla pudding, I was surprised by its fantastic taste. It’s creamy, smooth, and rich in vanilla flavor that I love so much.

Also, this sugar-free pudding has just the right amount of sweetness and is fantastic for serving on its own or with keto whipped cream.

I really liked the taste a lot!! So I recently decided to make several keto-friendly recipes with a delicious vanilla flavor, and one of my favorite recipes was Keto Vanilla Milkshake, and Keto Vanilla Ice Cream, I hope you try them and like them.

Oh!! Let’s get back to our delicious recipe, yes I remembered, this keto pudding, covered, can keep well in the fridge for up to three days. You can double or triple the batch to feed many people or to prep dessert in advance.

But know that this pudding is not suitable for freezing, so I do not recommend it. After freezing and thawing, the texture will not be as smooth and creamy as you would like in vanilla pudding.

What‌ ‌Ingredients‌ ‌Are‌ ‌Needed‌ ‌To‌ ‌Make‌ ‌This ‌Keto Vanilla Pudding

You will be very surprised, with the simple and inexpensive ingredients that you will need to prepare this delicious recipe.

Ingredients:

  • Heavy cream
  • Sugar-Free Vanilla Syrup
  • Egg yolks 
  • Unflavored gelatin powder
  • Sea salt

Instructions:

  • In a small bowl, pour 1/3 cup heavy cream and sprinkle gelatin powder on top. Immediately mix these two ingredients and set them aside. The cream of gelatin will become very thick.
  • Combine the remaining heavy cream, vanilla syrup, and sea salt in a medium saucepan over medium-low heat.
  • Heat for about 5 minutes, whisking continually, until the liquid is bubbling and very smooth.
  • After the mixture becomes smooth, transfer it directly to the bowl.
  • Now all you have to do is beat the egg yolk well and slowly pour it into the mixture, whisking constantly until everything is combined.
  • Then add the bloomed gelatin to the creamy mixture and beat until dissolved.
  • Let the pudding cool for 4 hours until cool enough – but don’t forget to put plastic wrap on it.
  • Before serving, stir or beat the pudding with a hand mixer until it is light and airy after it has set.​​

To make things even more clear, you should know that some boxed sugar-free puddings are technically be considered * dirty keto * before you make them because they contain about 5 grams of carbs per serving — but if you’re on a clean keto diet, you’ll be fine. Definitely, something to avoid despite its low carb content because once you add milk or any other ingredient to it, the carbs will go up.
